Our Employee Resource Groups (ERGs) utilize groups to share information regarding their events that commonly NOT volunteer opportunities. Events like coffee chats, monthly meetings etc. Is there a way to NOT have to tie an organization or volunteer hours to the event?

Here is a temporary suggestion. In the Admin panel, go to Company Organizations and add an organization. Add the BRG as an organization. You can select a company added organization for volunteer events only.
